Recipe Club: German Chocolate Bars

First off, a disclaimer: I try to keep my recipes around here low carb and sugar free...this is NOT one of those recipes.  If you're into rich, gooey, chocolatey desserts though, keep-a-readin'!  In my defense, this dish wasn't for me.  Nope, I was asked to take a cookie or bar to school for a Back to School luncheon for the teachers and decided to try something new.  Well, I NEVER take something new somewhere without experimenting with it first, so this was our practice run.  I don't mind sending a fattening, sugary dessert to teachers, because we all know calories and carbs don't count on in-service days, right teachers?  So, let's get started!

Did I mention I had a cute, little helper in the kitchen with me...


My Aunt Kathey bought me this handy, dandy little cookbook about fourteen years ago, and I have used it so many times.  If I ever need a semi-homemade dessert, this is my go-to book.  These recipes are so simply...well, even a toddler could do it!


You will need: A German Chocolate Cake Mix, 1 cup of Quick Oatmeal, 1 stick of Butter, 3 Eggs, 8 ounces of Cream Cheese. and 1 package of Coconut-Pecan Icing.  


With a fork, mix together the cake mix, oatmeal, butter (softened), and one egg, until crumbly.  


Keep mixing, girlfriend!


Set aside two cups of the mixture for later, and press the rest of the dough firmly into a 9x13 glass cake pan.  (Make sure to spray the cake pan with cooking spray first)


For the next layer, beat together softened cream cheese, and two eggs until smooth.  Then, mix frosting into cream cheese mixture.


Carefully spread the cream cheese mixture over the bottom layer.  


Next, take that extra oatmeal mixture and spread it over the cream cheese mixture.  


Then, pop it in a 350 degree oven...


NOOO!!!  Toddlers don't touch ovens!  Mommy pops it in the oven for 40-45 minutes.

I like the topping just a little brown, so I turned the broiler on for just a few minutes at the end, but be careful not to over cook it (aka burn it). 


A perfect little afternoon pick-me up to enjoy with a cup of coffee...or soy sauce.  You see, I was all set for this picture, but didn't feel like brewing a whole pot of coffee just for this one itty bitty picture, so I filled a coffee mug with soy sauce and pretended it was coffee.  I had you going for a minute, didn't I?  Don't worry, I didn't actually drink it, but I now have the perfect April Fool's Day joke ready for the hubby!


Jentry was so proud of her hard work!


  But, man, it was hard to pick just one...




Yum, this was worth that long 45 minute wait (well, plus the hour my mom took taking pictures of the dessert and soy sauce).


And then...it got messy!


These bars were a success, and are on their way to the teacher's lounge today!  I hope you'll try them out.

  1. Oh my goodness. Those look great. My moms birthday is Friday. If I was a good daughter I would make these for her. But I'm currently being a great mom and painting the kids rooms so we will see if I have time.

    1. Yes, I love having a helper! All three of my kids love being in the kitchen with me. The bars are great, but you're right, they're very tempting!

  10. Emily... I gave that cookbook to my #2 while she was in grade school. She loved to bake and we all gained about 20 lbs. in the process! Looks like your sous chef is also your chief taster. What a cutie pie!! -
