Soup Of The Day: Holiday Tortellini Soup

Happy Tuesday!  I've got bad news.  Just when you think the presidential election can't get any worse, it does.  Friends, This Is Us is not on tonight due to election coverage.  Ugh!  Here's the good news, I am sharing my all time favorite soup recipe that you can whip up tonight to watch the election coverage, or Netflix.  No judgement here!  I discovered this recipe one day when flipping through a winter issue of Taste of Home and knew I had to try is ASAP.  That was approximately nine years ago, and it is still a favorite around our household.  If you haven't tried any of my soups yet (what are you waiting on?) you must give this one a try.  Please!  It's a winner!


Here's what you need:  2 Tablespoons of Olive Oil, 2 ounces (or maybe a bit more) or bacon or pancetta (diced), 1/2 onion (finely chopped), 3 garlic cloves (minced), 1 carton (48 ounces) of chicken broth, 2 teaspoons of Italian Seasoning, 1 package of refrigerated cheese tortellini, 1 can (28 ounces) crushed tomatoes, 8 ounces of fresh spinach, salt and pepper, freshly shredded (or WalMart brand, ha!) Parmesan cheese.  

 P.S. That's not lemonade, it's chicken broth.

First off, heat olive oil in a dutch oven over medium heat.  Add bacon (or pancetta).  Cook until crisp.  My husband would like me to note that he searched the grocery store for 25 minutes for pancetta with no luck, therefore we are using bacon.  Let's be honest, you can't go wrong with bacon.



Add chopped onion; cook 3-4 minutes until tender.


Add garlic; cook one minute longer.



Add broth and Italian seasoning; bring to a boil and let simmer 5 minutes.



Meanwhile, cook tortellini according to package directions; drain.



Add tortellini to soup mixture.  Stir in crushed tomatoes and simmer five minutes.



Add spinach and cook until wilted.  Can I just take a moment and confess to you how powerful I feel when I wilt spinach?  There aren't many things I can over power, but spinach...take that!



Add a bit of salt and pepper to taste, and ladle up.  I like to serve my soup with a sprinkle of cheese on top...because everything is better with a sprinkle of cheese.

    1. I started looking forward to it on Monday & checked my DVR to make sure it was set, and then I saw all the election coverage. I was bummed! Next Tuesday you can curl up with a bowl of this soup & watch it!! :)

    1. Thanks, Jessica! We love tortellini here, too! Such an easy meal! I think the original recipe said to shop the spinach, but I just add it whole. My kids always pick around the spinach, but maybe your kids are better eaters!

  8. I know, I'm so mad about This is Us, too!! Although, I told Brian it's probably for the best because I wouldn't be able to concentrate on it anyway with the three ring circus going down on the other channels. Ha! This soup looks divine... I love anything with tortellini!!

    1. Hmmm...I bet it would work, as long as you squeezed most of the liquid out, BUT then you'd miss the power trip of wilting the spinach. ;)
