North Pole Breakfast...For Dinner

One of our favorite dinners around here, is breakfast.  My son gets a kick out of it; like we are the only one to think of such a thing.  Usually, our breakfast for dinner night is Wednesday, when we are rushing around with church activities and need a quick meal when everyone gets home.  After seeing a few of my favorite bloggers, like Jessica and Beth post about their North Pole breakfasts, I thought it would be fun to do one of our own, BUT I knew we were more "North Pole After Dark" people, so our breakfast would be an evening affair.  This was a pajama required event...


Every good Christmas party needs a signature drink, right?  We started our evening with a "Preschool" Poinsettia.  Which is just half cranberry juice, half ginger ale, in a fancy glass.


Just kidding....these cups are more efficient for my preschoolers....


Dad whipped up some fluffy pancakes, like only a dad can do (why do men make better pancakes than women?  Or, do they, maybe it's just something I just don't have the patience for), and some bacon...a must around here.  While he was doing that, I made one of my favorites; Never Fail Quiche!


Quiche is super easy, and can be made with whatever breakfast meat you have on hand.  I used ham, because this was the week after Thanksgiving, and I still had some delicious glazed ham I wanted to use up.


Here's what you need: one unbaked pie crust, chopped ham (or bacon, sausage, and whatever vegetables you want to include), 1 1/2 cup of grated cheese (again, any type you want), 5 eggs, 1 cup of half and half, 1/2 teaspoon of salt, a dash of pepper.  Those cute little snowmen are my salt and pepper shakers, in case you are wondering why they're hanging out "on the scene."  


Unroll your pie crust and press into the bottom of a glass pie dish.  Place your chopped meat (and veggies, if using) in the bottom of the pie crust.  


Sprinkle one and a half cups of shredded cheese over the meat.  I used a mixture of cheddar and swiss, but use whatever you prefer.  


Beat five eggs with 1 cup of half and half, and salt and pepper to your liking.  If you want to add a little kick, add in a bit of salsa to your eggs.   


Pour the egg mixture over the meat and cheese.  


Bake at 400 degrees for 30 minutes, or until eggs are set and crust is brown.  


You can enjoy this tasty quiche on a cold winter's night with a cup of my Creamy Tomato Basil Soup, or on Christmas morning with a cup of coffee in front of the fireplace.  Or maybe the day after Christmas, when you have leftover ham...

  1. I cannot wait to make that quiche. Well I guess I have to sub a lot of ingredient but still I CANNOT WAIT TO MAKE THAT QUICHE! LOL xoxoxoxo!

    1. Thank you, friend! If you're trying to avoid the carbs, you can make it without a pie crust and pour it into a silicone muffin pan.

  2. I love breakfasts for dinner! And yes, Brian also makes better pancakes than me! I don't get it! ha!
    So confession. I had never had quiche before until a few weeks ago. I talked myself into the fact that I didn't like it that's why I had never had it. Well then, we were somewhere and they had it so I tried it and I absolutely LOVED it! So I am sooo sooo glad you posted this recipe, because now I can actually make it! =)

  3. Love, love, love your fun twist on the North Pole Breakfast idea! And the "Preschool Poinsettia" drinks are too cute! This post is making me wish Alise was younger again. But it gives me a great idea for her and Steph before she leaves to go back to Orlando for Christmas. I'm shedding some tears over that one! Have a great Tuesday, Emily!

  5. This idea is GENIUS! I am also swooning over that quiche. I LOVE quiche but havne't made any for a LONG time. Now I think I need to asap. Brinner is one of our favorite meals. We rarely have time to make a good breakfast in the morning.

    1. Thank you, Beth! We love breakfast, but like you said, it's hard to fit in a good breakfast in the morning. My kid's thought this one was extra special because we sat in the "fancy" dining room. Ha!

  7. This is SO brilliant, Emily! I LOVE how you did a dinner instead. We have breakfast for dinner often, so this is right up our alley. And I was just telling B the other day that I really want to do a North Pole breakfast next year for the kids, but I'd rather do a dinner! We definitely don't have time to do a breakfast on the weekdays and a lot of the time on the weekend mornings we're busy. This is just perfect!

    1. Thank you, Lindsay! My son is always the first one up, so I knew it would be hard to get a North Pole breakfast together before he woke up, so this worked best for us. It was a great way to kick off the Christmas season, too, without everyone being in a rush to get to work or school.
