Steak Oscar by The Pro's....

I am so excited for this post!  You are in for a treat today!  I promise this is the last time I am going to mention my birthday...until next year, but it is still technically my birthday week. I usually post recipes on Tuesdays, and I wanted to share something really special for my "birthday dinner."  So, I thought what is one of my all time favorite meals for a special occasion?  Duh...it's having someone else cook!  I am handing my blog over to the World Champion Cook-Off Team, The Smoke House Rats today.  They'll be cooking up Steak Oscar for me, but first let me brag on my pals Dustin and Ashley!


We met Dustin and Ashley this summer while on a little weekend getaway, at our resort's pool.  We immediately clicked with them and spent the whole afternoon chatting and getting to know them.


Before I brag on their accomplishments, I have to tell you how completely humble they are.  You know, when you first meet people, you ask "What do you do?"  They told us they own a catering business.  Hmm...it wasn't until a few hours into our afternoon, that we discovered they were a big deal in the "catering" world.  Their catering consists of TV appearances...

And, and lots and lots of awards, and championships.  In fact, at the end of this post, I am going to list all the awards they have won.  Prepare to be amazed!


I was so excited that they would take time out of their busy schedule to share a recipe with us today.  Enough talking....let's eat!

Meet My Friends, The Smoke House Rats:

We are beyond excited to have the opportunity to give Emily a break and let us cook for her on her birthday!  I mean, who doesn't love a home cooked meal for their birthday!?!  
On the heals of returning from the World Food Championships in Orange Beach, Alabama where we were a Top 10 Finalist and finishing 5th, we thought we would grill up our favorite dish we presented to the judges, Steak Oscar.  


This dish is elegant, can be found on most fancy-pants steak house menus, yet is actually incredibly easy to make at home!  By definition, Steak Oscar is a filet topped with Bearnaise sauce, asparagus and crab.  In our competition, we decided to stick with the traditional and it seemed to work out well for us.


Here's what you need:  1/4 cup white wine vinegar, 1/4 cup white wine, 2 Tbsp minced shallots, 3 Tbsp chopped Tarragon - divided, salt, pepper, garlic powder, 3 extra large egg yolk, 2 sticks unsalted butter - melted, 1 Tbsp sesame oil, 1 lb asparagus, 4 - 6 oz beef tenderloin filets, 1 lb jumbo lump crab meat


First off, start your grill (charcoal or gas) and get to 600°.  (We highly recommend using Royal Oak Charcoal on a PK Grill equipped with ManGrates).  Set out the filets and season with a generous portion of salt, pepper and garlic powder.  Leave them out to bring to room temperature.

Next, combine vinegar, wine, shallots, Tarragon, a pinch of salt and pepper in a small sauce pan.  Bring to a boil and simmer over medium heat until reduced to a couple tablespoons (about 5 minutes).  Remove the mixture from heat and let it cool.  


Place the crab meat in a strainer over boiling water to heat.  While the crab is cooking, heat some sesame oil over medium heat in a skillet.  Add asparagus and saute for 5 minutes until the stalks are tender but still firm.


Once the filets have reached room temperature, grill hot and fast.  We like a medium-rare steak which tends to be about 6 minutes per side on our grill combination.  **This could vary with your grill and your preferred doneness.**  Allow the steaks to rest for 5 minutes.


While steaks are resting, transfer cooled wine mixture, egg yolks and 1 tsp salt to blender.  Blend for 45 seconds to 1 minute.  With blender on, slowly pour hot butter through blender opening.  Add 1 tbsp tarragon and blend for additional 15 seconds.   


Wow!!  My mouth is watering!  Thank you so much to Ashley and Dustin for cooking for me today!  I am truly honored.

  5. GIRL - this is unbelievable! I've always been terrified to make steak at home because the hubs is so picky about his and only likes it from fine restaurants. Lol. This sounds totally doable, though!

    1. I can totally relate. I don't grill, though, I let my husband have full control of outdoor cooking. He's so picky on his steaks that we're better off grilling hem at home! I can't wait to try this recipe!
